How did I never think of this before?! I have been making Baked Quesadillas for a very long time. I like how they come out crunchier, but also still a bit chewy, and of course melty cheesy!
My brother made grilled quesadillas recently for our Guac Off! family birthday dinner, and they were tasty! They come out nice a crunchy from the direct heat, just the way I like them. Never to be outdone, I went ahead and took these babies a step further: I slathered the outside of the tortillas with garlic butter from Chef Shamy. Yes I did. Perfect.
If you’re using a communal grill, like in an apartment complex, you should probably put a layer of aluminum foil on the grill grates first. You’ll miss those pretty grill marks, but you still get the same result. If you’re dong this at home, and you have properly cleaned your grill, then go ahead and throw those tortillas directly on the grill for those beautiful marks!
