Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, divided
  • 1 cup shredded sharp cheddar cheese
  • 2 garlic cloves, minced
  • 1 cup milk

Instructions

  1. Preheat the oven to 450F.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. Cut off 1/4 (2 tablespoons) of the stick of butter and place in a cast iron skillet. Cut the remaining butter into small pieces and use your fingers to mix into the flour.
  4. Add the cheese and garlic to the flour mixture, and toss to coat.
  5. Add the milk to the flour mixture and use a spatula or wooden spoon to mix well. Chill the dough in the fridge for 10 minutes.
  6. While the dough is chilling, place the cast iron skillet with the butter inside into the oven to melt the butter and heat the pan. Remove from the oven and tilt the pan to coat in the butter.
  7. Scoop a 1/4 cup of the batter into the center of the cast iron skillet. Continue to drop 1/4 cup portions of the batter into the skillet, spaced as evenly as possible.
  8. Bake until the biscuits are golden brown and puffed, about 18-22 minutes. Serve immediately.
