This recipe is part of our Family Dinner Book Club menu for James and the Giant Peach.

I practically live for stone fruit season! It only comes around once a year and is far too short. During these sweet summer months I get my hands on as many stone fruits as humanly possible and just basically turn into a giant stone fruit myself.

I also happen to love chips and salsa, and cocktails. Is it okay for that to be my summertime diet? I think so. Chips, Salsa, Cocktails, Stone Fruits. Yep. Looks pretty dang good to me.

Fresh Jalapeño Peach Salsa is just the best of both worlds all mixed up into one. Sweet and juicy peaches are mixed with slightly spicy jalapeños, red onions, and cilantro for your new favorite summertime snack.

You can eat this straight out of the bowl with a spoon, or with chips. If you wanna get fancy, you can serve it with tacos, chicken, or fish. So many options. Of course, pour yourself a cocktail to accompany.

I hope you have a hammock and a fire pit in your backyard, too. That would be the life!

Fresh Jalapeño Peach Salsa

Ingredients

  • 6 ripe peaches, diced
  • 2 jalapeños, diced
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1/2 cup chopped cilantro
  • 1 teaspoon white wine vinegar
  • 1 lime, for the juice
  • 1/2 teaspoon kosher or sea salt

Instructions

  1. In a mixing bowl, stir together all the ingredients and dig in!
  2. Peach Salsa can be eaten immediately, but the flavors will further develop if stored in the fridge for a few hours or overnight.
