Beatrice’s Goat dinner menu

Beatrice’s family is gifted a goat that they are are able to use to produce calves to sell as well as milk to use, make things, and sell. All of this enables Beatrice to enroll is continuing education. In the vein of Beatrice’s Goat, this month’s Family Dinner Book Club menu is all about that goat, ’bout that goat.

Beatrice’s Goat takes place in Africa, and our main course is a classic African recipe called Muchomo. Muchomo is a roasted meat on a stick, which is commonly found among street vendors in Uganda. The meat used can be of any variety: pork, beef, chicken, and of course, goat. The images you see here are beef because that is what is most readily available to me, but you can very easily use the marinade on any meat, skewer it, and roast it.

The muchomo in this meal is complimented by a goat cheese dip, compliments of the goat milk that Beatrice’s Goat provided to her family. This herby goat cheese dip is fabulous with fresh veggies, sliced baguette, and roasted potatoes. Which leads me to our next recipe: Roasted Potatoes. Is there any classic combination besides meat and potatoes?! There is not. So let’s add some roasted new potatoes to this meal!

I love a light, crisp, and refreshing chopped salad. I add a salad to dinner every chance I get – I just cant pass up the opportunity to get even more veggies into my kids’ bellies. This one is a fabulous bagged variety from my beloved Trader Joe’s.
