Our dinner for this month is both vegetarian and Mediterranean inspired. The Mediterranean eating plan follows the inverse food pyramid, which also happens to be the most water-conscious eating plan. The way we grow and prepare our foods determines how much water each industry is using, polluting and/or recycling.

Something you’ll notice both in the inverse food pyramid and in these photos here is that sweets and desserts are smack dab in the middle! What better motivation for following this eating style?! I’m kidding… mostly. We definitely should be limiting sweets, but I have a major sweet tooth, so any excuse works for me. Ha!
