Summer Farmer’s Market Salad

Summer Farmer's Market Salad from ChefSarahElizabeth.com

Summer is by far my favorite produce season. I love stone fruits more than I could ever explain. I served a stone fruit platter at my baby shower, and then used the leftovers for a pregnancy sangria. I may not love the summer heat, but I sure do love what the farmer’s market has to offer this time of year.

Head on over to your local farmers market and grab a few fruits that sound good to you. This is more of a guideline recipe than a real recipe. Make it your own! Switch out the lettuce, the nuts, the cheese for whatever suits your fancy. I used goat cheese here, but burrata would be amazing!

I started with arugula because it is one of my favorites for a salad base. You could also use a spring greens mix, baby spinach, romaine, or just about any lettuce that you find appealing. Then I added some fresh cherries and nectarines because those are the fruits I found at my farmer’s market. I threw in a handful of slivered almonds for some crunch, and drizzled with a reduced balsamic vinegar, extra virgin olive oil, and a pinch of salt. The next day, I added some goat cheese, dried cranberries, and toasted walnuts. I then decorated my salad with the pretty squash blossoms.

  1. I am totally loving the farmer’s market right now too. I’ve been going crazy with berries and peaches lately! Apricots are my favorite, but their window of awesomeness is so small.
