Do you ever feel like you need to press the reset button on your diet? I sure do! I can easily get into these waves of eating so much junk and sugary foods and I end up feeling so bloated and sluggish. When I reach that tipping point I make this Big Reset Salad. I start to crave something fresh, crisp, and clean. It’s always either a nice big salad or a green smoothie that I need to help me get away from all the junk.
I think it is clear after this Recipe Makeover week that I have a bit of a sweet tooth. I mean, c’mon. I came to the
“make healthier dishes” party with not one, but TWO desserts! Cocoa Protein Cake Bites and Spicy Yogurt Pie are definitely much lower in sugar and lightened up for the dessert category, but you gotta scratch your head at someone who turns to dessert first when tasked with making some healthier recipes.
Welcome to my personal diet reset. When I crave a big salad, I want something with lots of different flavors and textures. I always remember the Seinfeld episode where the group is forced by George to eat at somewhere other than Monk’s because he dated a waitress and now is feeling awkward around her. Elaine just wants her favorite big salad from her favorite diner, but isn’t able to satisfy that craving.

It’s a salad, only bigger, with lots of stuff in it.

Could you put it into a big bowl?

Oh Elaine, I feel ya! I can’t have what I want? Ugh fine, I’ll just take a coffee. You big reset salad can contain any of your favorite fresh vegetables and salad dressing. You can even throw in some chicken for added protein if you’d like.

Big Reset Salad
Ingredients
- 450 grams (about 6 cups chopped) romaine lettuce
- 100 grams (about 2 cups chopped) arugula
- 100 grams (about 3/4 cup) sliced black olives
- 2 red bell peppers
- 6 hard boiled eggs
- 2 avocados
- 3 large carrots
- 2 ears corn, roasted
Instructions
- Finely chop the romaine and arugula and place in a large mixing bowl.
- Dice the red bell peppers, avocados, hard boiled eggs, and black olives. Add to the mixing bowl.
- Grate the carrots, and cut the roasted corn off the ears, and add to the mixing bowl.
- Toss to combine well, and serve with your favorite salad dressing.
