Coffee Klatch: a social gathering for conversation while drinking coffee.

Let’s drink delicious coffee and gab about our lives! Our current topic is Gilmore Girls. The revival aired: A Year in the Life on Netflix! Did you binge watch? My sister, sister-in-law, and niece came over at 6am on Black Friday (Gilmore Friday) and we watched the entire series! Then I re-watched the four episodes on my own over the next few days.

We had the full Gilmore junk food diet experience. Coffee, pop tarts, red vines, doughnuts, pizza, tater tots, Chinese food, chips, popcorn. It all made an appearance on my coffee table as we lounged in our PJs and watched six hours straight of Gilmore Girls.

Today’s recipe is blueberry pancakes from Luke’s Diner. The girls often eat pancakes at Luke’s, he has saved them the last of the blueberry pancakes, and even made them a special order when needed. Enjoy blueberry pancakes with a perfect cup of Luke’s coffee.

Here is my spoiler filled recap!

Overall:
I’m so happy that everybody made an appearance! I don’t think anybody was left out. All the secondary characters are still themselves and perfect: Kirk, Taylor, Gypsy, Mrs. Kim, Babette, Miss Patty, Michel…

Where was the theme song?! I was so ready to belt it out at the beginning of each episode! They played it during the end credits after the last episode. I’m glad it was there, but that wasn’t enough for me.

They dressed Lorelai so old. The charm of Lorelai is that she’s eternally young!

Not enough scenes inside Luke’s Diner.

Winter

LOVED the black screen opening with all the sound bites. Good witty banter between the girls.
“I smell snow” yes!! (But it’s always the first snow she smells. This town is already covered in snow.)
Haha!! Love the girls eating tacos and Luke exasperated while cooking two entrees.
I was hoping there would be a bigger tribute to Richard, but I liked what they did.

Luke and Lorelai talking about having kids? I dunno. They should have done it 8 years ago. Paris as the fertility clinic owner. Perfect.

I think Rory being rootless is cool! Traveling to where the stories are, crashing with friends. Her book deal sound so fun! And that woman is amaze!
Paris and Doyle got married and had two kids! But they’re getting a divorce. Sad.
Oh man Hep Alien still rocks out in Lane and Zach’s house. Do they live in Sookie’s house now?

Logan! Yay! Oh they’re just friends with benefits? I don’t like that. Also, what about Paul? That story line did make me laugh a bunch, but also feel sad for him! Just break up with him already.

Emily in jeans and tshirt, but still with a huge gold necklace!

Spring

Lorelai’s blanket apology in therapy!

Mr. Kim! He does exist!
Odette? Logan is engaged?! Ugh that’s awful.
Haha Kirk’s short film. Perfect.
Richard leaving Luke money to franchise? Sweet that he wants to take care of Lorelai, but that isn’t what Luke wants.
Rory vs Paris speeches at Chilton!

Yay Rory met with Condé Nast, but it wasn’t exciting. A story about waiting in line? That was a fun scene, though. Lorelai getting all the things people were waiting in lines for.

“It was supposed to be Luke. It was always supposed to be Luke.” Awwww
Luke and Lorelai! Stop Keeping secrets from each other!!!

Mad Rory threw away allllll of her phones and moved home.

Summer

Oh man 22 year old April. Wanting to be so old and cool.
Ew I did not like the scenes at the pool.

Yay Rory is keeping the Gazette alive! I know it’s supposed to be sad that she’s reduced to a small town newspaper, but I think it’s sweet that she’s using her skills to help her hometown.

Oh my goodness the musical??? That was ridiculous and such a waste of time.

Yay Jess! So grown up, mature, and successful.
Who is this Jack Smith? What is he after? I don’t have a problem with that relationship, but I can see why it weirds out Lorelai.

Sad that Lorelai and Rory fight about her book idea!
And then Luke and Lorelai fight?! Ugh.

Fall

Lorelai is going to hike the trail? Dumb.

THE LIFE AND DEATH BRIGADE!!! Best part of this series so far.
Yay Rory let Logan go. I still want her to end up with him, but I’m glad she decided to say goodbye.

Lorelai’s story about her dad! Such a great Dad story!
Luke’s big speech to Lorelai! They’re getting married!

Rory going through the house seeing all the memories. Aww Richard in his study! She’s going to write in her grandfathers study!!!!

Yay the girls made up.
Omg Emily’s explosion at the DAR interview for a new member.
Yay Miss Celine is doing Lorelai’s wedding dress.
Finally Lorelai is wearing an outfit and hair that Lorelai would actually wear.
Keifer Sutherland is Luke’s only friend.

Rory’s meeting with Christopher. That was weird, but I think Rory is deciding what she wants for her own future.

Emily selling the house, moving to Nantucket, and getting a job. I’m glad she’s making a new life for herself!
Lorelai is going to use Luke’s inheritance to honor her dad’s memory in a different way. And Emily has terms. Perfect.

Dean! He has his life together. Married with three kids and happy and one on the way! “You taught me what safe feels like.” Cornstarch!

Sookie! So many wedding cakes! The one with all of Lorelai’s milestones! I don’t know if I have any tears left in my eyes. Michel getting mad at Sookie. Haha.

Yay Lorelai gave her blessing about the book.

Awww Kirk made their wedding amazing! I love that they eloped and I loved that entire montage!

Rory is pregnant!!!!!

Blueberry Pancakes

Ingredients

  • 284 grams (2 cups) all purpose flour
  • 8 grams (2 teaspoons) baking powder
  • 2 grams (1/2 teaspoon) baking soda
  • 2 grams (1/2 teaspoon) kosher salt
  • 355 milliliters (1 1/2 cups) milk
  • 2 large eggs
  • 56.5 grams (4 tablespoons) butter, melted, plus extra for greasing the pan.
  • 5 milliliters (1 teaspoon) vanilla extract
  • fresh blueberries

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. You want the flour to be fully mixed in, and some lumps are okay.
  4. Heat a skillet over medium-high heat, add a little butter until melted, and drop heaping spoonfuls of batter onto the hot skillet.
  5. Place fresh blueberries over the raw surface of each pancake. Cook until the edges are set and there are air bubbles all across the top of the pancake. Flip and cook until batter is set throughout, about 2-3 minutes per side.
