Let’s drink delicious coffee and gab about our lives! Our current topic is Gilmore Girls as we are re-watching the entire series leading up to the release of A Year in the Life on Netflix! Which, by the way, have you seen the official trailer?! Everyone is making an appearance! Yay! What’s going to happen?!?!?

Our recipe today is Spiced Stone Fruit Pie. Lorelai loves pie, and since it is her birthday week during this section of episodes, we’re having pie today. Two slices per person, at least. Served with coffee, of course. I made a spiced stone fruit pie because stone fruits are my absolute favorite, and I love stone fruit season every summer. They are out of season now that it is late October, but I always have bags and bags of frozen ones in my kitchen.

Since we are in the middle of Fall, I decided to flavor my pie with what I consider all the warm fall spices: cinnamon, nutmeg, cloves, and ginger. It’s like a mashup of my favorite things from two different seasons. Always serve pie warm with vanilla ice cream or whipped cream. It should be illegal to serve pie without one of these essential accompaniments.

-Jess not calling Rory. Ugh! She’s too sweet and innocent to be with a bad boy.

Sookie is pregnant! Yay!

-Paris didn’t get into Harvard. So sad! Her meltdown, though, fabulous! Rory is so sweet to her.
-Rory got into Harvard, Princeton, and Yale! Exciting! Luke’s hug. Lol!
-The inn catches fire. So sad! Of course Michel is immediately on the phone looking for a new job. Lorelai is badass and springs into action without wasting a moment.
-Rory is going to Yale! Lorelai is such a supportive mother! “If it’s right for you, it’s really right for me.” Love it. Haha Richard and Emily having no reaction at first. They’re so exicited! Jess looked up how far away Yale is. He’s a little sweetie sometimes.

Lorelai’s birthday week!
-Happy Birthday Mallowmars. Cute. I want happy birthday mallowmars! Or happy birthday truffles. Or happy birthday candy corn.
-Jackson and Sookie are offended about the worlds largest pizza. Seriously the best couple.
-Lorelai’s birthday week foods include 2 pieces of pie while waiting to meet her father, a giant bowl of mac and cheese with Rory, the world’s largest pizza, and a 4 foot high chocolate cake (with both buttercream and whipped cream frosting because the frosting is Lorelai’s favorite part) with individual vanilla cupcakes on top. Of course she had coffee all week, too.
-This is a pretty good birthday week menu! Too bad I didn’t have occasion to bake a four foot tall cake, otherwise that would have been the recipe for today’s coffee klatch instead of spiced stone fruit pie.

-Ay yi yi Jess! So moody and angsty. Rory handled herself well at the party. Stupid Jess. Then Dean punches him! Oh snap.
-Dean is engaged. At 18. Nope. Stop it, Dean! He gets mad at Rory because of her reation. Understandable, but also, don’t get married at 18.
-Jess left again. His dad showed up. He failed out of school. No prom. All these issues with Jess. I’m not team Jess. Him going to see his dad was pretty awkward sweet though.

-Lorelai giving Paris a hug! Lol! Paris can’t handle it.
-Sad about the money for the new inn. Aww Rory being a big girl and going to her grandparents.

-I love Lorelai’s dress at Rory’s graduation! Where can I get one for myself?
-Rory’s graduation speech!!! So many tears. Sookie getting up and down. So funny. Class of 2003. That makes Rory 2 years younger than me! Now I’ll have to extra compare her life to mine in the new upcoming series.

-Luke’s dream about Lorelai saying to not get engaged! What’s going to happen?!

-Babette frantically welcoming them home. So perfect. I want a Babette neighbor!
-Haha Taylor’s window to Luke’s Diner.
-Sookie finally looks pregnant! So cute!

-Rory is in college! Of course Paris made arrangements for them to be roomies. Aww Lorelai helps the girls get into the groove of college! That looked like such a fun night.

-Lorelai and Sookie starting a catering company, and Sookie making “kiddie food”. Gravlox, Jalapeño chipotle cream sauce Mac and cheese “its green!” Lemon garlic aioli for the blanched veggies “tastes like diapers”.

-Aww breaking ground on the Dragonfly Inn! More tears!

-Dean mumbling about Rory the night before his wedding! Don’t get married!!! Luke! You should have said something! Agggghhhhh!

-Kirk. Haha such a loveable weirdo! His alarm fiasco and then getting a kiss on the cheek from Lorelai was just so sweet. And then Kirk preparing for his date! And it goes well! If this wasn’t a sweet tooth week for Lorelai’s birthday on coffee klatch, then we would have had diner meatloaf with champagne instead in honor of Kirk’s date!

Spiced Stone Fruit Pie

Ingredients

  • 1 double crust pie dough
  • 567 grams (about 3 cups) frozen stone fruit such as cherries, peaches, and nectarines
  • 43 grams (3 tablespoons) granulated sugar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1.5 fluid ounces (3 tablespoons) water
  • 24 grams (3 tablespoons) cornstarch

Instructions

  1. Preheat the oven to 400F.
  2. Divide the pie dough into two pieces, and roll them out to 1/4 inch thickness. Line a pie plate with one of the pieces of dough.
  3. In a medium saucepan over medium heat, stir together the frozen stone fruit, sugar, and spices. Cook over medium heat to defrost the fruit and sugar.
  4. In a small bowl, whisk together the water and cornstarch to create a slurry. Pour this slurry into the fruit mixture, stir to combine well, and cook until thick, about 2-3 minutes.
  5. Pour the fruit mixture into the prepared pie plate, and top with the remaining crust.
  6. Place the pie in the oven and bake until the crust is golden brown, and the filling is bubbling, about 30-40 minutes.
  7. Serve hot with vanilla ice cream.

  1. Two slices of pie is exactly what I want on my birthday! I also go for a stone fruit pie first, and I love the spice in here. I love getting another view on GG – especially one that differs in many ways (I’m Team Jess all the way). I was totally ga-ga over that dress, too – I want one. And I didn’t realize you were such a young’un…I fall somewhere between Lorelai and Rory. 😉
