It’s Thanksgiving night. My belly is full of turkey, rolls, and mashed potatoes. The girls are soundly asleep and our Christmas tree is leaking water all over our living room floor. Yes, we did a Thanksgiving thing and a Christmas thing on the same day. We spent the day cooking and eating with David’s family and then with mine. A few days ago I got the Christmas itch and suggested to David that we pick out a Christmas tree on Thanksgiving night. We kept it a surprise and ended up with two delighted little girls as we pulled into the Christmas tree lot. When I told my mom what we would be doing tonight she looked disapprovingly and informed me that it isn’t even December yet. In my family, cranberry sauce makes an appearance on both the Thanksgiving and Christmas tables, so I have no shortage of these ingredients in my fridge. Cranberry Brie Bites are tangy, sweet, buttery, flaky, melty, brie-y pockets of holiday-time flavor. I ate So many while testing this recipe, and I really think you’ll be the talk of the town when you bring these babies to any holiday party.

Okay enough about the food (said no one ever!) Do you buy a real live Christmas tree or do you go with the fakesies? I grew up with a fake tree, and I never had a problem with that. I haven’t had a Christmas tree at all for the last few years. David is a real tree guy, so that makes 2014 the first year I’ve ever picked out a real Christmas tree. I got so excited about the prospect and that is why we ended up at Christmas tree lot on Thanksgiving night. Holy cow, live Christmas trees are expensive! We got to watch them put it in the shaker, wrap it up in green and red netting, attach the stand, and strap it to the roof of our Honda Pilot. We then came home and began decorating my very first live Christmas tree! I made coffee, we had Christmas music playing, we were savagely digging through all the ornaments to find our favorites, and then it all came to a stop. The stand sprung a leak! Our sweet little Christmas tree is now stashed on the balcony until tomorrow when we have the time and energy to fix it. Our home is still filled with Christmas cheer and the anticipation of decorating very soon. I can’t wait to have my first Christmas with my little family in our home together. Cranberry Brie Bites
Yield: 24-36

Cranberry Brie Bites

Ingredients

  • double recipe pie dough
  • 1/4 pound brie (about 1/2 a wedge)
  • 6 tablespoons (1/3 cup) cranberry sauce

Instructions

  1. Preheat the oven to 400F.
  2. Slice the brie into small pieces, about 1/2 inch squares.
  3. Roll out the pie dough to 1/4 inch thick and cut into 3-inch circles.
  4. Place half of the pie dough circles onto a parchment or silpat-lined baking sheet.
  5. Top each pie dough circle with a piece of brie and about 1/2 teaspoon of cranberry sauce.
  6. Brush the edges with water, top with the remaining pie dough, crimp the edges with a fork, and poke small holes in the tops of the cranberry brie bites.
  7. Brush with heavy cream or an egg wash, if desired, and bake until the pie dough is flaky and golden brown, about 20 minutes.
  8. Serve with extra cranberry sauce and honey.
