iPhonetography Friday: Culinary School, Second Course

You see, after learning how to properly use and care for knives in the beginning of culinary school the classes move on to further the knife skills of the students on ingredients other than potatoes. Not only are there many other vegetables, tubers and fruits to slice and dice in all manner of shapes and sizes, there are also the animals! Meats of all kinds are deconstructed with just the sharp knife and whetted appetite of the crazed culinary student who has been waiting weeks, weeks I tell ya, to cut into and cook something other than potatoes and lemons.

I will be graduating from culinary school in five weeks! Yay! So, for the next five weeks I thought it would be fun to take you through my culinary school career for iPhonetography Fridays. Here are photos from my first class. We didn’t get to actually cook anything until we passed that first class. What we did all day every day was learn all about sanitation, how our taste buds work and are affected by various flavors, we made mayonnaise, and the thing we spent most of our time on was classic knife cuts.

Soppressata Bean Soup with Petite Sirah

Course Two of my fabulous wine pairing dinner was a two-bean soup with bacon, soppressata, and various spices paired with The Crusher Petite Sirah. The original recipe for this soup called for Polish Sausage, but I love all things Italian so I chose to switch it up a bit. Soppressata is a common meat to use on cheese and charcuterie platters. It can be found hot and mild. For this soup I used mild so as not to detract from all the other powerful flavors. I loved this soup because it so vibrant and colorful and not very “soupy”. There is just enough broth for it to be called soup, but it is more similar in consistency to a chunky chili. In any case, it was delicious and I ate ridiculous amounts of it while preparing this dinner throughout the day. Even Elyse, my non-red-meat-eating friend loved it. I mean LOVED it! Jenn, the pickiest person in the world wrote “yum” on her notecard and even said aloud that it was a lovely dish. This soup is really fabulous all on it’s own. It doesn’t need any pairing at all!

Oven-Baked Taquitos

I had been craving black beans and cheese. Instead of making my usual double-decker quesadilla, I thought I’d try something new. Taquitos sounded yummy, but I wasn’t in the mood for deep-frying. So I made oven-baked taquitos.
