This year, I volunteered to make some allergy-friendly cookies since there weren’t enough people signed up to accommodate. So I decided I was up to the challenge. I hope the seasoned gluten- and dairy-free bakers who received my cookies enjoyed them! Abby has been super into peppermint hot cocoa lately, so that’s the cookie I made. Hint of Mint Cooca Cookies. Hot Cocoa + Peppermint (Candy Canes) all mixed up into cookie form.
I looked up some of my favorite allergy-friendly bloggers to see how they make cookies, and I came up with the recipe you see below. My first attempt, though, I used way too much flour and not enough liquid. I could barely even form the dough into cookies because it was so crumbly! The resulting baked cookies, came out even crumblier! The girls loved them because “they’re still cookies”! So I scaled back the flour and came up with an actual cookie dough instead of whatever crumbly sand mixture I had previously. I wanted the cookies to be minty, but I also wanted the chocolate to shine. So I skipped the peppermint extract, and instead used only candy canes. The espresso powder deepens the chocolate flavor, and then the crushed candy canes are like little minty surprises throughout each bite!
