Let’s drink delicious coffee and gab about our lives! Our current topic is Gilmore Girls as we are re-watching the entire series leading up to the release of A Year in the Life on Netflix!

My sister in law is coming over at 6:30am this Friday – which we have dubbed Gilmore Friday – so we can watch A Year in the Life in it’s entirety before she has to go into work. I already have a pile of junk food on my kitchen counter waiting for our special screening. She is bringing over even more snacks, and we have plans to order both pizza and Chinese food… at 6:30am. I am so exicited! Of course there will be so much coffee.

Today’s recipe is Muffin Bottom Pie, inspired by Sookie. She brings muffin tops to Lorelai because they’re the only part she likes.
“What’d you do with the muffin bottoms?”
“I made muffin bottom pie. It’s actually really good, I’m think about patenting it.”
“Mmm muffin bottom pie, sounds dirty.”

My coffee klatch cohort, Heather, already shared her version of Muffin Bottom Pie with you, but I just couldn’t get the ideas out of my head so I had to try my hand at these two. I think you can tell by the number of photos which was my favorite. First we have coffee pudding muffin bottom pie, this is a double chocolate chip muffin, crumbled to form a pie crust, then filled with coffee pudding, and topped with fresh whipped cream. I inhaled a piece after shooting these photos and I am so happy with how it turned out! The crust is crisp like a graham cracker crust, but then soft in the center like a cookie! The coffee pudding is super creamy and of course has our favorite flavor: coffee. Top it with fresh whipped cream and a sprinkle of crushed espresso beans.

The second muffin bottom pie utilizes a traditional pie crust, and is filled with a sort of muffin bottom bread pudding. The result is a crazy moist filling inside a flaky pie crust. I used lemon poppy seed muffins for this one.

She’s pregnant again?! Oh Jackson. Didn’t get the vasectomy. Her response lol: no! No talking. Just do it. Or when I get home, I will.

Coffee Pudding Muffin Bottom Pie

Ingredients

  • Crust:
  • 6 jumbo chocolate muffin bottoms, chopped and dried
  • 113 grams (8 tablespoons) unsalted butter, melted
  • Filling:
  • 150 grams (3/4 cup) granulated sugar
  • 36 grams (1/4 cup) cornstarch
  • 10 grams (3 tablespoons) instant espresso
  • 1 gram (1/4 teaspoon) sea salt
  • 591 milliliters (2 1/2 cups) whole milk
  • 4 large egg yolks
  • 5 milliliters (1 teaspoon) vanilla extract
  • 56.5 grams (4 tablespoons) unsalted butter
  • Topping:
  • fresh whipped cream
  • espresso beans, crushed or whole

Instructions

Crust:

  1. Preheat oven to 350F.
  2. Chop each muffin bottom into quarters and allow to dry at room temperature overnight, or in a 350F oven for 20 minutes.
  3. Crumble the dried muffin bottoms in a large bowl. Add the melted butter and stir to combine well.
  4. Press the crumbs into a pie plate in an even layer on the bottom and up the sides.
  5. Bake the crust until set, about 20 minutes. Allow to cool.

Filling:

  1. In a medium saucepan over medium heat, whisk together the sugar, cornstarch, espresso powder, and salt.
  2. Slowly whisk in the milk and cook, stirring constantly, until thick, about 7-10 minutes.
  3. In a medium bowl, whisk the egg yolks. Temper the egg yolks by slowly whisking in some of the hot milk mixture in a steady stream until the egg yolks are warm.
  4. Whisk the egg yolks back into the remaining milk mixture in the pot in a slow and steady stream, and cook 2 minutes.
  5. Strain the pudding through a fine mesh sieve into a medium bowl. Stir in the vanilla extract. Add the butter, 1 tablespoon at a time, stirring until each piece is melted before adding the next piece.
  6. Pour the custard into the pre-baked muffin bottom crust, and allow to cool.
  7. Place parchment paper or plastic wrap directly on top of the pudding, and chill in the fridge at least 4 hours.
  8. When ready to serve, top with freshly whipped cream and crushed espresso beans.
