Pasta Soup with spicy sausage meatballs is getting me through this stormy day! We don’t get rain nearly often enough here in Southern California, and we almost never have storms. Today though. Today we’re having a real storm! I woke up to thunder and lightning in the wee hours of the morning. It slowly became louder, longer, and closer together. We could hear the lightning crackle so loud; the storm must have been right on top of us.

I am so afraid of thunder and lightning. I can’t sleep through storms. I get nervous and scared. I run through all the potential hazards in my head of what damage could be caused. I usually cry during storms. This morning the fear took a while to hit. I was okay with the early and quieter thunder and lightning. When the first really loud crack hit I was downstairs on the couch with Henry. I picked him up and ran upstairs to where David was. First I peeked in Katie’s room: completely asleep. A louder thunderclap hit as I was making my way to Abby’s room. Abby and I met at her door. She sleepily asked with a shaky voice, “what’s happening?” I told her it was thunder and lightning, hugged her, and walked her to our bedroom.

David was getting ready for work. Abby cried a little as he hugged her and talked about how excited he was for the storm because thunder and lightning are so cool. They stood by the window and watched the lightning as David held Abby and told her all the things he loves about storms. I got into our bed and under the covers with Henry and Errol (the dog). Abby joined us and we snuggled. She was so nervous about the storm. I held my composure in order to comfort her. I always try to model bravery for the kids because I think it will keep them from being afraid of everything. I admitted to Abby that I’m afraid of storms. We talked all about what causes lightning and thunder. We counted the seconds between the flash of light and the rolling thunder. We looked up cool photos of lightning. Once she calmed down and started feeling happier, I started to cry! I had used up all my bravery energy and my fear had to come out through my eyes.

Everyone got to school and work safely and on time. The thunder and lightning left our neighborhood and the rain stopped and we got doughnuts. Then I took Henry to his two month checkup and that was a whole new bucket of tears! He is perfectly healthy and growing, but he got shots today, and we both cried. Now we’re back home and it has started raining hard again! The thunder and lightning have returned as well. So today I’m camped out on the couch. I’m snuggling with my baby, my dog, and my cats. I’m watching my favorite shows. I’m eating pasta soup.

What’s not to love?! The pasta cooks in and soaks up lots of the soupy sauce. So it becomes thicker like a stew. Serve it right after cooking. If you let it sit and simmer to keep warm, the pasta will absorb too much of the soup and it won’t really be soup anymore.

Pasta Soup

Ingredients

  • 453 grams (1 pound) spicy italian sausage (or your favorite meatballs)
  • 226 grams (1/2 pound) short pasta (farfalle, rotini, penne, etc)
  • 24 fluid ounces (3 cups) tomato sauce
  • 24 fluid ounces (3 cups) low sodium chicken stock
  • 24 fluid ounces (3 cups) water
  • 40 grams (about 1/2 cup) grated parmesan cheese
  • shredded mozzarella cheese, for serving
  • ricotta cheese, for serving
  • fresh basil, for serving

Instructions

  1. Season the italian sausage with salt and pepper, measure into tablespoon sized balls, and brown on all sides over medium heat in a large soup pot. Remove to a plate. Alternatively, prepare meatballs according to your favorite recipe.
  2. In the same large soup pot, mix together the pasta, tomato sauce, chicken stock, and water. Bring to a boil, reduce heat to low, cover, and simmer until the pasta and meatballs are cooked through, about 20 minutes. Stir frequently to prevent the pasta from sticking together.
  3. Stir in grated parmesan cheese until melted, and serve immediately.
  4. To serve, ladle soup into a bowl, and top with mozzarella cheese, ricotta cheese, and fresh basil as desired.
