Our sweet, lovable, Catherine of Weelicious is expecting her third bundle of joy in about a month. What better time than now for a bunch of food bloggers to throw her a virtual shower? Congratulations Catherine! We can’t wait to meet the little cookie! I wrote something of a love note to Catherine last year, so we all know I’m a fan. I have had the pleasure of working in the beautiful Weelicious kitchen and witnessing Catherine’s true self on many occasions. The first thing I tell people when they ask about Catherine is that she really is as nice in person as she appears online. When Gaby and I first started brainstorming this here shindig we pretty quickly decided that it would have to be a naturally colorful affair. We don’t know the gender of the future bundle, so our theme is every color ever as long as it is done naturally. Weelicious is big on natural and organic… only the best for our bodies and our babies’ bodies, right?!

For my own recipe contribution, I made rainbow smoothies! How gorgeous are these?! They take a bit of time to get all the layering done, but the result is just so pretty that they’re worth the effort. (After I photographed these, I dumped them all back into the blender, added some vanilla extract and whole milk, and now I have about 4 quarts of natural fruit smoothie ice cream alllll for myself!)

I couldn’t stop at just the smoothies, though. I set up my own little baby shower food table complete with Catherine’s favorites and cravings. The dining room art wall felt perfect for the backdrop. I love having Abby and Katie’s artwork displayed in our home, and this entire wall is dedicated to just that. When they have made something at school or home that they’re particularly proud of, they will ask to put it up on the wall. Often during mealtimes they will point to things they have made and share a story about it. When the new school year begins, we take down all the art, put it into memory boxes, and start building up our new art wall. I hope they continue to humor me with this forever. We even put homework assignments and tests up on the wall that the girls feel they did well on or are excited about. Abby’s notes and grade from her first in-class speech are up there as well as Katie’s first in-class writing of the entire alphabet. Well, now I’m crying! This is what baby showers are all about, right? Okay okay. Sorry. Back to Weelicious. I have plenty of blogspace to talk about my own bundles.

Catherine had cravings for avocado toast at the beginning of her pregnancy, so of course that is on our table here. I can’t even count the number of bowls of popcorn I have seen Catherine consume… so much so that she started me on the habit and popcorn is a regular snack around here. Organic, air popped, no oil, salted popcorn, of course. You will find tons of PB&J recipes on Weelicious and in her cookbooks, so I knew I needed to cook up my own PBJ treat, hence the muffins.

Rainbow Smoothies

Rainbow Smoothies

Ingredients

  • Purple Layer
  • 12-16 ounces frozen mixed berries (use whatever size bag your local grocery carries)
  • 20 grams (1 tablespoon) honey, if desired for additional sweetness
  • 4 fluid ounces (1/2 cup) milk, any type you love
  • Green Layer
  • 3 ounces (about 2 handfuls) fresh baby spinach
  • 1 banana
  • 280 grams (1 1/2 cups) frozen pineapple chunks
  • 4 fluid ounces (1/2 cup) milk, any type you love
  • Yellow Layer
  • 280 grams (1 1/2 cups) frozen pineapple chunks
  • 1 banana
  • 2 fluid ounces (1/4 cup) milk, any type you love
  • Orange Layer
  • 1 carrot, roughly chopped
  • 140 grams (3/4 cup) frozen mango pieces
  • 1 orange, peeled
  • 1 banana
  • 4 fluid ounces (1/2 cup) milk, any type you love
  • Pink Layer
  • 12 ounces (about 3 cups) frozen strawberries
  • 1 teaspoon vanilla extract
  • 4 fluid ounces (1/2 cup) milk, any type you prefer

Instructions

  1. Place the ingredients for each layer in the blender and blend until smooth. Add more milk as necessary to reach desired consistency. Carefully pour each smoothie layer into your serving glasses. If a layer is too thin, place it in the freezer for about 10 minutes to thicken.
