Abby and David spent a couple hours in the ER last night. Oy. Today is a comfort food day 100%. It is cloudy and chilly outside, and with all the heightened emotions of last night, which carried over to today, I am eating like it’s the last chance I’ll get.

I had a giant iced coffee with a croissant this morning after school drop off (Katie was almost not allowed in to preschool because we were so late), and I’m thinking about getting an afternoon coffee as well. I would love to just go back to bed and sleep for a while. I think that would cure my emotional state. I just finished eating carrots and potato chips with way too much ranch dip, and I am now eating one of my favorite comfort foods that is kinda weird and not many people know about it. So of course I will tell the entire internet. Here is my easy comfort pasta recipe: 1 pound dried pasta shells (medium, small, or mini), 2 tablespoons butter, 2 cans condensed tomato soup, all the black pepper and parmesan cheese your heart desires. Cook the pasta, and mix in the rest of the ingredients. David thinks this is gross and laughs/gags every time he sees me making it. Which is just fine with me because it means that I have an entire pound of pasta to consume on my own over the next few days. What do you think? Is it weird? I love it!

Everybody is safe and in one piece. Our family dog, Errol, bit Abby’s finger last night as we were putting the girls in bed. He didn’t attack her, and we aren’t exactly certain what happened, but we have a guess. We were all in the room together, I was brushing Abby’s hair, and Errol was laying on Abby’s bed next to me. He didn’t bark, growl, jump, flinch, or even move at all. There was a sudden scream and cry from Abby and she had a few small bite marks on her left ring finger. We had an incredibly long and busy weekend, and it was past bedtime. So David and I both think the majority of the tears and screams were from tiredness rather than pain. Since we couldn’t accurately asses the damage based off Abby’s information, David decided to take her to Urgent Care to get it checked out just in case. This led to Katie not falling asleep until 9:15pm and Abby not until 10:30pm.

We let the girls sleep in this morning and decided last night that we would be okay with them being late to school. Little did we know that the preschool doesn’t let kids in after a certain time! We were just a few minutes past that cutoff so after giving me a hard time, the preschool office allowed Katie to attend school this morning. With the tiredness and emotional state we were all in, Abby was traumatized on the way to school because she saw a black bug on her shoe. She screamed and cried like she had gotten stung by something. So we had to spend many, many, many minutes calming her down and searching the car for the offender.

P’sghetti sandwiches were my ultimate jam as a child. Any time my mom asked what I wanted for dinner, the answer was always “spaghetti”. Without fail. 100% of the time. All I ever wanted was plain spaghetti with just butter. The p’sghetti sandwiches of my youth were nothing like what you see pictured here. This is the grown up version that could easily be served as a fun party appetizer. As a child, though, I did not tolerate spaghetti sauce. My favorite meal was this: plain spaghetti tossed with butter, piled on top of buttered soft french bread, topped with Kraft “parmesan cheese” powder. No sauce, definitely no meat, as much butter as possible.

These little guys here are spaghetti tossed with a super quick and simple meat sauce and it is served on top of toasted garlic bread. I still top with parmesan, but now I use the real stuff. This is comfort food all the way for me. The day that I shot these photos, I ate every single one of the p’sghetti sandwiches you see pictured. Errol tried to steal some, but nothing gets in the way of me eating spaghetti!

I’m glad everybody is doing well and I hope the rest of the week goes much more smoothly than the last 18 hours. Whew.

P'sghetti Sandwiches

Ingredients

  • 1 pound ground beef
  • 1 tablespoon dried oregano
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • kosher salt
  • freshly ground black pepper
  • 1 28-ounce can pureed or crushed tomatoes
  • 1 pound dried thin spaghetti

Instructions

  1. Cook the pasta according to package directions.
  2. Heat a small pot over medium heat. Add the ground beef and break into small pieces with a spoon.
  3. Sprinkle all the seasonings over the ground beef and continue to cook and stir until browned, about 5-7 minutes. Drain off any excess grease.
  4. Add the tomatoes to the meat, stir to combine, and simmer while the pasta cooks.
  5. Once the pasta is finished cooking, drain, add the meat sauce to the pasta and toss to coat.

Notes

If you want the spaghetti in small pieces as in the photos, you can break the spaghetti with your hands before cooking it, or use 2 knives to cut the spaghetti after you've mixed it with the meat sauce. You can also search online for "cut spaghetti" to make this part of the job much easier!
