We are finally starting to get some colder weather here in Southern California. So of course I am going crazy with the warming comfort foods for dinners! Even on the days when it hasn’t quite been fall weather, I have been making soups, stews, mac and cheeses, and this super yummy slow cooker balsamic beef. I love this recipe so much I can’t even tell you! It is so darn easy to put together, it cooks while you’re away at work and school, and it falls apart at a mere glance into the slow cooker when it is ready.

I’ve made this several times in recent weeks and I have grown quite fond of serving it with homemade macaroni and cheese. So when I heard that I would be making a trashed up burger to celebrate How Sweet It Is and her baby, I immediately knew that this balsamic beef would be perfect on a toasted bun with some mac and cheese! Then I added the sautéed peppers and onions and it was even better. Then! I turned those sesame seed buns into garlic bread and died instantly because it was so crazy delicious. You’re welcome, you’re welcome, you’re welcome for this stick-to-your-ribs, warming, comforting, easy, and delicious burger sandwich contraption that you’ll be 100% enjoying on a regular basis from now on.

Slow Cooker Balsamic Beef Mac and Cheese Burgers
Yield: 8-10

Slow Cooker Balsamic Beef Slow Cooker Balsamic Beef Mac and Cheese Burgers

Cook Time: 4 hours
Total Time: 4 hours

Ingredients

  • 1 large yellow onion
  • 2-3 garlic cloves
  • 2-3 pound beef chuck, roast, or stew meat
  • 1 teaspoon kosher salt
  • 1 bay leaf
  • 5-8 sprigs fresh thyme
  • 1/2 cup balsamic vinegar
  • 1/2 cup beef stock
  • 1 yellow onion
  • 2 red bell peppers
  • 8 buns, rolls, or other bread
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon garlic powder
  • 2 tablespoons grated parmesan cheese
  • 1 recipe Slow Cooker Balsamic Beef (recipe above)
  • 1 recipe One-Pot Stove-Top Mac and Cheese

Instructions

  1. Slice the onions into rings and the garlic into discs and place them in the bottom of the slow cooker.
  2. Place the beef on top of the onions and garlic along with all the remaining ingredients.
  3. Set the slow cooker to high and cook for 4 hours, or cook on low for 6 hours.
  4. You'll know the meat is ready when it easily falls apart when pulled with two forks.
  5. For some bonus goodness, strain the cooking liquid into a small saucepan, whisk in some flour, and cook over medium to thicken into a nice gravy for dipping!
  6. Thinly slice the onion and peppers, and sauté them in a touch of oil over medium heat until soft, about 7 minutes.
  7. While those are sautéing, mix together the butter, garlic powder, and parmesan cheese until thoroughly combined.
  8. Spread the butter mixture on all the bun or roll halves, and place under the broiler until golden brown, about 3 minutes. Watch them so they don't burn!
  9. Set out the garlic bread buns, the sautéed peppers and onions, the Balsamic Beef and the Mac and Cheese, and let everyone go to town creating their new favorite sandwich!

  1. OMG How did I not come to your blog and comment on this until now? This is absolutely incredible sounding! A burger with beef AND Mac n Cheese? Holy wonderment, this sounds amazing and like something I need to make for my hubby stat!
