Whole 30 Day 10

Whole 30 Day 10
Wednesday, July 30th

I did not take a nap today! Woohoo! I did feel one coming on, though, so I got up and did chores instead. I had my prosciutto and eggs early this morning, which were, as usual, delightful. It was sort of downhill from there. Nothing sounded appetizing today. Not even the soups and sauces I prepared last night. I had a fridge full of options and I didn’t want any of them. I wasn’t even craving anything illegal, either. It’s not like I slipped into a grumpy mode and wanted nothing but bread. I simply didn’t want any of the options available to me. So I didn’t eat lunch. I know that isn’t the right thing to do, but thats what I did, because I am an adult and I make my own choices! I ate 1/2 a larabar sometime mid morning and munched on grapes. I kept myself busy with work and chores. Around 4:00pm, when David was about half an hour from home, I realized how hungry I was, and also remembered that we would be going on a 7 mile bike ride upon his arrival, so I ate a chicken breast bathed in Cholula. Then I ate a banana just before leaving the house.

I realize 7 miles is a short ride for cyclists, but I am just starting, and this was my longest ride yet. It was a great workout and I’m so glad we did the full seven miles even though we could have easily cut it down to five. I have trouble finding exercise routines that I enjoy, but so far I really love cycling. Being active is always a good mood booster, and being outside with the wind blowing on my face just feels so good. It’s also a confidence booster when I can keep up with David since he cycles more often than I do. This was his second ride of the day!

I had planned to make Asian chicken lettuce wraps for dinner tonight, and I stuck with my plan, even thought the In-N-Out near our house was pumping all those delicious food scents into the air just as we were returning home from our bike ride. I seriously wanted to go get a big, juicy cheeseburger with french fries and a milkshake! I was happy with how easily I turned down that notion. Once we got home, I collapsed onto the couch for a few minutes then got up and started making dinner. I’ll post the recipe in a few days, after I’ve had the chance to tweak and photograph the recipe. It was go-o-ooood. My sauce was a combination of coconut aminos, cashew butter, rice vinegar, and sesame oil. It thickened up nicely in the pan without the aid of cornstarch, and flavored the chicken and veggies nicely. David raved about dinner, and even ate the little bit of leftovers straight from the pan! He might be getting used to this way of eating, too!

Overall a good Whole 30 day. If I can continue to make myself such satisfying meals as Asian lettuce wraps, I just might be able to last another 20 days on this crazy meal plan. 10 days down, 20 to go!

Breakfast: non-crispy prosciutto, scrambled eggs, grapes.

Lunch: 1/2 a larabar, grapes.

Pre-workout meal: 1 small chicken breast with cholula, 1 banana.

Dinner: Asian chicken lettuce wraps.

Dessert: 3 figs.
